Permit help

Not sure which permit you need? We'll help you understand the next step.

Requirements depend on what you sell, how you prepare it and where you operate. Dishly can help explain what may apply before you complete your creator setup. One thing to know up front: Kern County does not have a MEHKO program, so there is no permit to cook hot meals in a home kitchen here — the paths below are the ways Kern County food businesses become verified to sell.

Cottage Food — Class A

Best for: approved low-risk, shelf-stable foods made at home and sold directly to customers.

How it works

Class A is registration-based: you register with Kern County Environmental Health and sell directly to your customers. This is the fastest lane for most home bakers.

Cottage Food — Class B

Best for: approved low-risk, shelf-stable foods made at home, sold directly and indirectly (for example, through a shop or market that resells them).

How it works

Class B requires a permit from Kern County Environmental Health, including an inspection of your home kitchen.

Commissary-based businesses

Best for: meal prep and prepared foods made in a licensed commissary kitchen.

How it works

You prepare food in a licensed commissary and hold the county health permit tied to that kitchen. If you currently cook hot meals at home, this is the path that lets you sell them in Kern County.

Food trucks & licensed kitchens

Best for: food trucks, licensed restaurants and other licensed kitchens.

How it works

Bring the county health permit you have — or are closest to — and we match your listing to it.

  • Dishly does not issue government permits.
  • Dishly does not guarantee approval.
  • Creators remain responsible for meeting applicable legal requirements.

Dishly reviews applicable permits, licenses and certifications based on the creator's business type and location. Verification reflects a document review only; it does not guarantee any particular kitchen conditions or outcome.

Dishly is a registered IFSI

About Dishly's IFSI registration

Dishly, Inc. is registered with the California Department of Public Health as an Internet Food Service Intermediary (IFSI) — registration approved October 23, 2026. That registration covers the Dishly platform. It does not permit any individual creator, it does not create a MEHKO path in Kern County, and it does not cover meal subscriptions, meal delivery services, or internet food sales. Your permits show right on your Dishly profile, so customers can see you're verified before they order.

FAQ

Questions before you apply?

Does applying commit me to anything?

No. Applying starts a conversation and gets you a free demo of your Dishly page. You decide after you see it. Applying does not guarantee approval or a listing. No monthly fee on the Standard plan.

What does Dishly charge?

0% creator commission for your first 14 days. After that: only 10% commission on orders where customers discover you in the Dishly marketplace, and only 5% commission on orders placed through your personal Dishly direct link. No monthly fee on the Standard plan. Pro is an optional paid upgrade at $24.99/month, never required. You keep 100% of tips, and 100% of the delivery fees you set and charge. Payouts are made through Stripe to your linked bank account; payout summaries are sent by email after every order. Customers pay their own service fee — $0.99 for their first 7 days after their first completed order, then 5%, always between $1.50 and $4.99 — and that fee is paid by customers, not creators.

What is Dishly Pro?

Dishly Pro is an optional paid upgrade at $24.99/month — never required. Standard has a $0 monthly fee, so you can start free on Standard and upgrade to Pro later only if you want to. As shown on the Plan, Trial & Fees screen in the app, Pro is for creators who want more listings and deeper analytics: 25 active listings (Standard includes 10 active listings), advanced analytics — business & listing views, view-to-order rate, and most-viewed dishes — new vs. returning customers, best days & times, and category performance, cart insights showing dishes sitting in customers' carts right now, and per-dish analytics + CSV export.

Do I need a permit to sell on Dishly?

Yes — before your food can be listed, you need to hold the permits your business type and county require, and Dishly reviews them as part of onboarding. You do not need a permit in hand before applying: apply now, pick the permit status closest to yours, and we'll help you understand what applies. Each creator is solely responsible for holding those permits. Dishly's review is a document review only — it does not replace or grant a county permit, and final permit decisions rest with Kern County Environmental Health.

What if I sell from home?

It depends on what you sell. If you make approved low-risk, shelf-stable foods, California's Cottage Food rules may let you sell from home — Class A by registering with the county (direct sales only), or Class B with a county permit (direct and indirect sales). Kern County does not have a MEHKO program, so there is no permit for cooking hot meals in a home kitchen here. If you cook hot meals, the path is preparing them in a licensed commissary or licensed kitchen instead. Either way, apply and pick "None yet — need help understanding options" if you're unsure — we'll walk through what applies to your business.

What is Cottage Food?

Cottage Food is California's framework for selling approved low-risk, shelf-stable foods made in a home kitchen — things like breads, cookies, cakes, jams and dry mixes. Class A operators register with Kern County Environmental Health and can sell directly to customers. Class B operators hold a county permit, are inspected, and can sell directly and indirectly (for example, through a shop). Cottage Food covers only the state's approved food list — it is not a path for hot meals.

Can I use my own delivery?

Yes. Creators who offer delivery set their own delivery times and keep 100% of the delivery fees they set and charge; customers can accept, or choose pickup instead. Pickup-only is fine too.

What if I currently take orders through Instagram or text?

Keep your Instagram — put your Dishly link in your bio. Customers order and pay in the browser (no app download needed on link orders), you stop chasing Venmo screenshots and "is this still available?" DMs, and those link orders cost you only 5%.

Can my existing customers order directly from me?

Yes — that's your direct Dishly link. Share it in your bio, by text, or on QR codes. Customers open your storefront in their browser, and orders through your link are only 5%.

Do customers need the Dishly app?

Not on your link — customers can open your storefront and order in their browser without downloading anything. The Dishly app (iOS and Android) is there for customers who want marketplace discovery, order tracking, and messaging.

How do payouts work?

Payouts are made through Stripe to your linked bank account, and a payout summary is emailed after every order. You connect payouts after your application is reviewed — no bank information is collected in this application.

What happens after I apply?

A real person reviews what you sell, checks what requirements apply to your business, prepares your free Dishly demo, and contacts you with next steps. Applying does not guarantee approval or a listing. Questions any time: admin@dinewithdishly.co.
